Noodle Burgers Filled With Field Mushrooms And Meatless Cheeseburgers
Took a while to figure out how to eat this one
I first saw Ramen Burgers on an Internet deal at a local pub, but in this recipe I chose to use ordinary noodles.
They looked interesting as, instead of a bun, the burger is made using noodles, which are made and fried first.
I then had to think what I could put in them, as, not eating meat, I wanted something a bit different, so I decided on the following recipes and they turned out mouthwatering, with an unusual taste, and a hint of walnuts.
Each one is an extremely filling meal.
I am a large eater but I was battling to finish this Ramen Burger!
Preparation Time: 30 minutes (plus 30 minutes in fridge)
Cooking Time: 20 minutes
Makes: 2 servings
Ingredients
For the Bun:

1 small egg
1 - 2 tsp chicken stock powder
For the filling:
200 g cottage cheese
1 egg, beaten
¼ cup walnuts, chopped
½ cup breadcrumbs
2 tbsp diced onion
1 tbsp chopped parsley (optional)
1 tsp Worcestershire sauce
2 field mushrooms
1 cup breadcrumbs
1 tbsp Sundried tomato pesto (optional)
A few pieces char grilled capsicum
A few pieces char grilled eggplant
50 g fetta -sliced
Mayonnaise (optional)
Tomato Sauce (optional)
Method
Break up about half the packet of noodles
Bring water to the boil, add a tsp chicken stock powder, and boil these noodles for about 3 minutes. Run under cold water, and drain.
Put some more stock powder in, or if you are using instant noodles, half a packet of seasoning which comes with them, and stir. Add a small beaten egg and mix.
I used egg rings to shape the noodle burgers. Cover with plastic wrap.
Weigh down with a heavy object to make them more dense, and then put in the fridge for 30 minutes.
Meanwhile make the meatless cheeseburgers by mixing the cottage cheese, breadcrumbs, very small beaten egg, diced onion, parsley, walnuts, and Worcestershire sauce. Form them into patties.
For the noodle burgers - put bit of oil in a frypan and heat, then take off the plastic wrap and carefully put the noodle burgers in the pan of hot oil.
Cook for about 4 - 5 minutes and carefully flip them over for another 5 minutes.
Cook the meatless cheeseburger patties in the same pan -you could coat them in bran or some breadcrumbs but I did not do this. At the same time cook your field mushrooms.
Add whatever condiment you wish on each side of the noodle burgers.
Add Sundried tomato pesto, mayo or whatever you like
Add the meatless cheeseburger, char grilled capsicum and eggplant, sliced fetta cheese. and mushroom.
Close the burger, put in a tooth pick or similar to squash it down a bit and make it easier to eat. Serve with serviettes!
