North African Carrot Salad
After Christmas, I seemed to have an excess of crisp, fresh carrots in the fridge but really wanted a change from including them in traditional roast dinners.
This is a quick and easy recipe but the spices and marinading really lift the salad and create something moreish that will complement any meal. It might look just look like some grated carrot but you'll be surprised how good it tastes.
Preparation Time: 10 minutes

Makes: 4 servings
Ingredients
500g carrots
1 clove garlic
2 tbsp red wine vinegar
6 tbsp extra virgin olive oil
Pinch of salt
1/2 tsp ground cumin
1/4 tsp cayenne pepper
Cracked black pepper
Sprinkle do thyme to decorate
Method
Grate all the carrots. If you have a food processor with a grating attachment it makes this a super speedy salad to prepare.
Tip the grated carrots into a sieve and leave to drain for a couple of minutes so that you lose some of the excess moisture.
Combine the rest of the ingredients.
Mix the marinade through the carrots and leave to marinade in the fridge for a couple of hours or overnight.
Scatter a little thyme on top to decorate.
