Nutritious Spinach Cutlets

If you are looking at a dish which is healthy as well as delicious to taste, Spinach cutlets would definitely be one of the better option. It is an ideal dish for the kids to take in their lunch box to school; or for serving the guests visiting at home.

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 8 servings

1 cup chopped spinach
1 cup soaked green gram (moong dal), soak it in water for 2-3 hours for better results.
1 boiled potato

1 cup cornflakes
4-5 spoons oats
1/2 spoon cumin powder
1/2 spoon black pepper powder
1/2 spoon dry mango powder (you may substitute it with 1/2 spoon lemon juice)
1 pinch turmeric powder
1/2 tsp garam masala powder
2 chopped green chillies
Salt to taste

Soak the green gram in water for a couple of hours to make them moist. Now grind them into a fine mixture.
Transfer it to a bowl and mix finely chopped spinach, green gram, mashed potatoes and oats to it.
Add 1 tsp of oil in a pan, heat it and transfer the above mixture to it and mix it properly.

Now add cumin powder, turmeric powder, green chillies, black pepper powder, dry mango powder and garam masala and salt. Mix all the ingredients well and cook it for 3-4 minutes.

Roll the above mixture into small balls and flatten them to give a shape of a round cutlet.

Powder the cornflakes and roll the cutlets into it, to make it more crispy.

Take a non stick pan; add 2-3 tsp of oil to it and roast the cutlets. Let it cook till it turns golden brown in colour.

Now flip the cutlets to help it get roast from the other side as well.

The tasty cutlets are now ready to serve hot with green chutney or tomato sauce.
