NutSoy Pulp Hummus
Got leftover pulp from making almond milk or soy milk? Don't throw it out! Use it to whip up a delicious and healthy homemade batch of hummus!
Ready to enjoy as a spread or dip with crackers and carrots

Makes: 4 servings
Ingredients
Ingredients
1 cup fresh soy bean or almond pulp (should be slightly damp, could also substitute with 1 cup almond meal with ¼ cup water)
¼ cup tahini
¼ cup lemon juice
½ teaspoon paprika
1 teaspoon chopped garlic or garlic powder
1 teaspoon cumin
Pinch salt and pepper
Optional: parsley, olive oil, water, or extra lemon
Method
Using a small food processor, blender or stick blender, mix together all ingredients except pulp and optional ingredients.
Add pulp and combine until it becomes a thick paste.
If you would like a runny/smoother hummus, stir in tablespoons of water, lemon juice or olive oil depending on taste preferences.
Serve with chopped parsley or refrigerate, covered until serving.
