You really can't beat great chocolate chip cookies, there's just something so comforting and nostalgic about them.
Best eaten still warm, right off the baking tray, these nutty chocolate chunk cookies with their gooey chunks of rich dark chocolate and crunchy walnuts are crisp on the outside and light and chewy on the inside, making them comforting, delicious and devastatingly moreish.
Ingredients 220g unsalted butter
3/4 cup brown sugar
1/2 cup sugar
1tsp vanilla extract
2 1/4 cup plain flour
1tsp baking soda
pinch of salt
120g good quality dark chocolate (50-70%), roughly chopped
1 cup walnuts, roughly chopped.
Preheat oven to 180 degrees Celsius. In a large bowl beat together sugar, brown sugar, butter, egg and vanilla until light and fluffy (1-2 minutes).
Sift over flour, baking soda and salt and stir to combine.
By hand, mix in the chocolate chunks and walnuts.
Roll dough into tablespoon sized balls and place on a non-stick baking tray, making sure to leave at least 3 cm between each cookie as they will spread.
Bake cookies for 13-15 minutes or until lightly browned.
