Nutty Snail Brioche

Don't worry, there aren't any snails in this recipe, it is simply named after its shape, which forms a swirl like that of a snail's shell. What this bread does contain, however, is plenty of nuts, all deliciously caramelised.

Preparation Time: 3 hours 10 minutes
Cooking Time: 40 minutes
Makes: 1 large loaf

Ingredients
500g wholemeal bread flour
7g fast action yeast
1 tsp sweetener (or 40g caster sugar)
200ml almond milk
4 eggs
½ tsp salt
200g margarine
40g chopped hazelnuts
50g walnut halves
25g cashew nuts
25g pine nuts
30g sliced almonds
25g pistachio kernals
100g raisins
100g dark muscavado sugar

Method



  • Mix the flour, yeast, salt, and sweetener/sugar together.



  • Separate two eggs and add the eggs to the other two whole eggs.



  • Beat 100g margarine into the eggs and add to the flour mixture.



  • Gradually add milk to form a dough.



  • Knead the dough for ten minutes and prove for one hour.



  • Toast the nuts and then mix with the raisins.



  • Cream 100g margarine with the muscavado sugar, then mix in the nuts.



  • Roll out the dough and spread the nut mixture over the top.



  • Roll the dough up like a sausage roll, and then roll it round in a swirly circle.



  • Leave the dough to prove for another half hour, then glaze with the remaining egg whites.



  • Bake in an oven pre-heated to 200 & #3872 ;C/ 180 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
