Nutty Teddy Cookies

These cookies are almost too cute to eat and very fun to make. Both kids and adults will love them and their yummy nutty taste. Feel free to change them to suit your own taste by using different nuts such as macadamias or cashews.

Preparation Time: 30 minutes (plus 1 hour chilling time)
Cooking Time: 7 minutes
Makes: 50 teddies

Ingredients
185g butter, softened
1 cup white sugar
2 eggs
1 tsp vanilla essence
2 1/2 cups plain flour
1 tsp baking powder
1/2 tsp salt
1/3 cup raw almonds

Method
  • Preheat oven to 200 degrees.



  • Using an electric beater mix butter and sugar in a medium bowl until smooth and creamy.



  • Mix in eggs and vanilla essence.



  • Stir in flour, salt and baking powder. This should form a soft dough.



  • Wrap dough in cling wrap and refrigerate for one hour.



  • Once chilled, roll dough between two sheets of baking paper until 5mm thick, then cut out teddy shapes.



  • Place teddies on a lined tray and form eyes and a nose using a tooth pick or skewer.



  • Place an almond on the belly of each teddy and fold the arms up so they are hugging the almonds.



  • Bake for approximately 7 minutes, or until lightly golden in colour, careful not to burn the almonds. Cool completely on a wire wrack.
