Oat Based Pie

The perfect pie for a hot summer day.

Oat Based Pie

Preparation Time: 10 mins
Cooking Time: 40 mins
Makes: Family serve

1 cup of oats
1 cup of wholegrain flour (corn or rice for gluten free)
½ cup extra virgin olive oil
½ cup water
Salt and pepper to taste
Pinch of dried mixed Italian herbs

200g of ricotta cheese
2 eggs (dairy intolerant, replace cheese and add 8 eggs)
Salt and pepper to taste
Good pinch of fresh or dried mixed Italian herbs (oregano, basil and thyme)
2 cups of mixed vegetables
4 rashes of bacon (vegetarian disregard)
½ cup of grated tasty cheese


Preheat oven to 180 degrees celsius. In a big bowl put all of the ‘base’ dry ingredients together and mix well.
Make a well in the middle and pour in the water and oil. Mix thoroughly and leave in the fridge for approximately an hour.
*Once cold, spray or grease a pie dish and press the base mixture into the dish evenly, including up the sides, then bake at 180°c for 10 minutes or until light brown.
While the base is baking wash and dice any vegetables you wish to add to the pie and mix them in a large bowl. If you are unsure it is recommend you use spinach, tomato, mushrooms, zucchini, olives, onion and garlic.
Slice the bacon in strips and add to the mix, then add eggs, cheese, herbs, salt and pepper and mix thoroughly.
Place the filling into the pie base and bake for 30 minutes or until golden brown on top.
