Oat Biscuits

These informal biscuits make a good alternative to the cereal bars you buy on the way to work, or put in your kids lunch boxes. They are also suitable for vegans as they don't use any eggs or dairy products. Based on the brands I used, each biscuit is about 56 calories.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 23 servings

Ingredients
125g wholemeal flour
125g fruit muesli
75g Xylitol sweetener (or castor sugar if you prefer)
75g margarine
3 tbsp water

Method
  • ground the muesli in a food processor and mix with the flour and sweetener/sugar.
  • Rub in the margarine for a breadcrumb like consistency.
  • Add the water to form a dough.
  • Divide the dough into twenty-three and use your hands to flatten into rounds.
