These Oat Biscuits are easy to make and the ingredients keep for a reasonable amount of time (provided they're stored in air-tight containers). They are the perfect type of biscuit to have with tea. You can also use this recipe in honour of ANZAC Day.

Ingredients:
150gms of butter, chopped
1/2 cup (115gms) of caster sugar
2 tablespoons of golden syrup
1 1/2 cups (150gms) rolled oats
1 cup (150gms) of plain flour
1/2 cup (45gms) of desiccated coconut
1 teaspoon of bicarbonate of soda
Method
Preheat the oven to 160 degrees and line two baking trays with baking paper
Combine butter, sugar, and golden syrup in a small saucepan over medium heat. Stir until melted and then remove from heat.
Mix the oats, flour, and coconut in a separate bowl.
Combine the bicarbonate of soda with 1 tablespoon of boiling water. Add to the butter mixture.
Stir together dry ingredients until well combined.
Spoon tablespoons of the mixture onto the baking trays; flatten them with the back of the spoon, allowing room for spreading.
Cook for 10-15 minutes or until golden
