Oat Cakes

As these cakes use no eggs or dairy products, they are a tasty treat for vegans. I made them with agave nectar, which is extra sweet, but has a lower GI than honey, meaning double the pleasure, half the sin. Based on the brands I used, each cake should be about 124 calories.

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 18 servings

Ingredients
1/2 tsp bicarbonate of soda
100g plain flour
300g fruit muesli
100g agave nectar
80g soya butter
80g Xylitol sweetener (or castor sugar if you prefer)

Method
Pre-heat the oven to 170 & #3872 ;C/ 150 & #3872 ;C fan/325 & #3872 ;F/3 Gas.
  • Mix the flour and bicarbonate of soda together.
  • Melt the sweetener.sugar with the butter and nectar.
  • Ground the muesli in a blender.
  • mix the ground muesli with the flour.
  • Pour in the caramel for a stick consistency.
  • Spoon into cup cake cases and bake in the oven.
