Oat Raisin Cookies

Oat & raisin cookies are my favourite type of biscuits. They are soft, chewy, juicy, and very morish.

Preparation Time: 40 minutes
Cooking Time: 12 minutes
Serves: 26

Ingredients
75ml vanilla infused rapeseed oil
75ml hazelnut infused rapeseed oil
2 tbsp sweetener (or 200g caster sugar)
200ml boiling water
100g raisins
1 egg
140g self-raising flour
300g porridge oats
ΒΌ tab bicarbonate of soda
1 tsp ground cinnamon

Method
  • Soak the raisins in boiling water for twenty minutes.

  • Drain the raisins and keep the drained juice to one side.
  • Whisk the cinnamon and sweetener/sugar with the the rapeseed oils.
  • Beat in the egg, and gradually add the drained raisin juice.
  • Mix together the flour, bicarbonate of soda, and oats, and then fold into the mixture.

  • Stir in the raisins.
  • Pre-heat the oven to180 & #3872 ;C/ 160 & #3872 ;C fan/325& #3872 ;F/5 Gas.
  • Drop the mixture onto a baking tray using heaped tablespoons.

  • Bake in the oven, and then allow to cool.
