Oat Raisin Cookies
Oat & raisin cookies are my favourite type of biscuits. They are soft, chewy, juicy, and very morish.
Preparation Time: 40 minutes
Cooking Time: 12 minutes
Serves: 26
Ingredients
75ml vanilla infused rapeseed oil
75ml hazelnut infused rapeseed oil
2 tbsp sweetener (or 200g caster sugar)
200ml boiling water
100g raisins
1 egg
140g self-raising flour
300g porridge oats
ΒΌ tab bicarbonate of soda
1 tsp ground cinnamon
Method
Soak the raisins in boiling water for twenty minutes.
Drain the raisins and keep the drained juice to one side.
Whisk the cinnamon and sweetener/sugar with the the rapeseed oils.
Beat in the egg, and gradually add the drained raisin juice.
Mix together the flour, bicarbonate of soda, and oats, and then fold into the mixture.
Stir in the raisins.
Pre-heat the oven to180 & #3872 ;C/ 160 & #3872 ;C fan/325& #3872 ;F/5 Gas.
Drop the mixture onto a baking tray using heaped tablespoons.
Bake in the oven, and then allow to cool.
