Oat Shortbread Biscuits

Shortbread are buttery sweet cookies that melts in the mouth. Perfect for snack or party dessert table. This shortbread recipe is using oat flour instead of plain flour.



Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 30 biscuits

Ingredients
220g chilled butter, chopped
2/3 cup caster sugar
2 cups oat flour
1/2 cup rice flour
1 tsp vanilla extract
1 egg

Method
  • Preheat the oven to 160C.

  • Process the butter, sugar, flour, rice flour, vanilla and egg in a food processor until a smooth dough forms.



  • Place the dough on a lightly floured surface and knead gently.



  • Roll tablespoons of the dough balls into balls. Place on baking tray lined with non-stick baking paper and flatten slightly with a fork. Bake for 22-25 minutes or until just golden brown.



  • Cool on the baking tray. Enjoy!
