Shortbread are buttery sweet cookies that melts in the mouth. Perfect for snack or party dessert table. This shortbread recipe is using oat flour instead of plain flour.

Makes: 30 biscuits
Ingredients
220g chilled butter, chopped
2/3 cup caster sugar
2 cups oat flour
1/2 cup rice flour
1 tsp vanilla extract
1 egg
Method
Preheat the oven to 160C.
Process the butter, sugar, flour, rice flour, vanilla and egg in a food processor until a smooth dough forms.
Place the dough on a lightly floured surface and knead gently.
Roll tablespoons of the dough balls into balls. Place on baking tray lined with non-stick baking paper and flatten slightly with a fork. Bake for 22-25 minutes or until just golden brown.
Cool on the baking tray. Enjoy!
