Oat Slice
Trying something different again and making a slice from oat flour and ground flaxseeds. This slice is good for school lunches or to serve for morning tea.
Two nice thick slices served with berries
Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 15 slices
(8 inch square pan size)
Ingredients
2.5 cups steel cut oats
1/4 cup flaxseeds
2 tablespoons of chia seeds
1/3 cup of maple syrup
1/2 cup of almond milk
1 large banana
1 tablespoon of cashew spread
1/2 teaspoon of baking powder
1/2 teaspoon vanilla extract
1 tablespoon of raw cacao
1/2 teaspoon of cinnamon
2 eggs
Pinch of salt
Method
Preheat the oven to 140 degrees fan forced or 160 degrees non fan forced.
In a blender, blend the oats to make an oat flour.
Use a nutri bullet or a cheap version of the bullet if you have one, it works so much better and makes a fine oat flour no chunks.

Place into a large bowl.
Now ground the flaxseeds in the blender or nutri bullet and once it has ground up fine, add it to the oats.
The flaxseeds can be completely ground up if done right
Add in cinnamon, salt, baking powder, chia seeds
In another large bowl add the banana and mash it up with a fork.
Add in egg, milk, cashew spread, maple syrup, and vanilla and mix well to combine.
Once combined pour this mixture into a square cake tin
Bake for 40 minutes.
When cooked leave in the cake tin for 10 minutes to cool a little.
After ten minutes take slice out by lifting up the baking paper.
Allow to cool completely then cut into slices.
Cut slice into desired size
Notes
For this I use Kraft cashew spread or almond spread, it any brand will do or you could even use peanut butter.
