Octopus and Potato Salad

I recently had the pleasure of visiting Croatia for the summer and buying some fresh octopus from the fish market. I had previously bought a ready-made octopus salad, but nothing compares to when you make your own.

If you do not have the option of buying fresh octopus, buying a frozen (already cleaned one) is fine.

Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: 4 servings

1 to 2 octopuses
4 potatoes
1 red onion
1 teaspoon of capers
A small bunch of parsley
Salt and pepper to taste
Extra virgin olive oil to taste

Clean the inside of the octopus or get your fish monger to clean it for you. Boil the octopus for 40 minutes (depending on the size). When it is firm, yet soft, leave it to cool on a plate.

In a separate pot, boil the potatoes.

Slice the octopus into 1cm pieces and place into a bowl

Slice the boiled potatoes and add to the octopus.

Finely chop the red onion and add to the salad.

Add the chopped parsley and the capers

Sprinkle the extra virgin olive oil and add some salt and pepper.

Stir the salad gently making sure everything is coated in the oil.

Serve up as an entree to accompany your main meal, or as a meal on its own.
