Sometimes you just want a chocolate cake.
Nothing innovative with beetroot, beer or multi-layers. Just a plain old fashioned chocolate cake. Moist, rich and chocolately.
For when you have one of those kinds of yearnings, here is the recipe I use to satisfy mine.

Preparation Time:15 minutes
Cooking Time: 45 minutes
Makes: 10 servings
Ingredients
1 cup water
1 1/4 cups caster sugar
125g butter
1/2 cup cocoa
1/2 tsp bicarbonate of soda
1 1/4 cups SR flour
2 eggs, lightly beaten
Frosting
1 cup icing sugar
1/3 cup cocoa
30g butter, softened
hot water
Method
Place water, sugar, butter, cocoa and bicarbonate of soda in a saucepan over a low heat and stir until the sugar has dissolved and the butter has melted.
Bring to the boil and simmer gently for 2 minutes.
Pour mixture into your mixing bowl and leave to cool for 30 minutes.
Add the flour and eggs to the mixture and beat until just combined.
Pour into your prepared tin.
Bake for 40 minutes or until an inserted skewer comes out dry.
After 5 minutes turn cake out of baking pan. Cool completely on a wire rack
Frosting
Sift together the icing sugar and cocoa.
Mix in the butter and enough hot water (very gradual amounts) to form a firm spreadable frosting.
Smooth frosting over cake and let stand to set frosting for about 30 minutes.
Cut and devour!
