Old Fashioned Sticky Date Pudding
This is an easy recipe for an old fashioned sticky date pudding. Best served warm, with caramel sauce and ice-cream.

Cooking Time: 40-45 minutes
Makes: 8 servings
Ingredients
250 grams pitted dates
1 1/2 cups of boiling water
1 teaspoon bicarbonate of soda
250 grams chopped butter, room temperature
3/4 cup brown sugar
1 teaspoon vanilla extract
2 eggs, at room temperature
2 cups self raising flour, sifted
Vanilla ice cream, to serve (optional)
Caramel sauce, to serve (optional)
Method
Preheat oven to 180ÂșC and lightly grease round oven proof dish.
Chop the dates into 1cm pieces.
Combine the dates and boiling water in a saucepan over medium heat and bring to the boil.
Cook, uncovered for approximately 5 minutes or until dates are soft and almost all of the water has been absorbed.
Remove from the heat, and stir in the bicarbonate of soda. Set aside to cool for 20 minutes.
Using an electric mixer, cream the butter, sugar and vanilla.
Add the eggs, one at a time and beat well after each addition.
Fold the flour into the butter mixture.
Fold the date mixture into the butter mixture.
Spoon mixture into prepared dish.
Bake for 40-45 minutes, or until a skewer inserted comes out clean.
Serve warm, with caramel sauce and vanilla ice cream.
