Old Fashioned Sticky Date Pudding

This is an easy recipe for an old fashioned sticky date pudding. Best served warm, with caramel sauce and ice-cream.



Preparation Time: 30 minutes
Cooking Time: 40-45 minutes
Makes: 8 servings

Ingredients
250 grams pitted dates
1 1/2 cups of boiling water
1 teaspoon bicarbonate of soda
250 grams chopped butter, room temperature
3/4 cup brown sugar
1 teaspoon vanilla extract
2 eggs, at room temperature
2 cups self raising flour, sifted
Vanilla ice cream, to serve (optional)
Caramel sauce, to serve (optional)

Method
  • Preheat oven to 180ÂșC and lightly grease round oven proof dish.
  • Chop the dates into 1cm pieces.



  • Combine the dates and boiling water in a saucepan over medium heat and bring to the boil.
  • Cook, uncovered for approximately 5 minutes or until dates are soft and almost all of the water has been absorbed.



  • Remove from the heat, and stir in the bicarbonate of soda. Set aside to cool for 20 minutes.



  • Using an electric mixer, cream the butter, sugar and vanilla.



  • Add the eggs, one at a time and beat well after each addition.



  • Fold the flour into the butter mixture.



  • Fold the date mixture into the butter mixture.



  • Spoon mixture into prepared dish.



  • Bake for 40-45 minutes, or until a skewer inserted comes out clean.



  • Serve warm, with caramel sauce and vanilla ice cream.
