Olive Tapenade

Olive tapenade is cheap and easy to make and is delicious on sandwiches and crackers. It also makes a wonderful and simple pasta sauce or a nice accompaniment for meat or fish.



Preparation Time: 20 minutes
Makes: 2 1/2 cups

Ingredients
2 cups kalamata olives, pitted
1/2 cup baby capers
1 bunch fresh mint
Handful fresh parsley
Juice of 1 lemon
Chilli flakes
Olive oil



Method
  • Finely chop the olives (it may be best to do 1/2 cup at a time) and place in a mixing bowl. Add the capers.
  • Finely chop the mint and parsley and add to the mix. Pour in half the lemon juice and add a pinch of chilli flakes.
  • Blend the mixture in a processor until well combined, adding a touch of olive oil during the process.

  • For a variation, replace one cup of the kalamata olives with green olives.

    These make a delightful gift by putting the tapenade into jars.
