This is a healthy alternative to the traditional pizza, using eggs as the base. It tastes delicious and you are able to put on whatever toppings you like. This recipe can also be eaten for breakfast, lunch or dinner. The pizza I made was only a small single serving pizza, but to make a larger pizza add some extra eggs and use a larger frying pan to cook your omelette.
Ingredients 1/2 Tbsp olive oil
3 large eggs
2 Tbsp tomato paste
1/2 cup grated cheese
1/2-1 cup pizza fillings (I used smoked salmon, capsicum, green onion, baby spinach and avocado, however, you can use your favourite pizza toppings for this recipe. Other fillings could include ham, salami, tomato, mushroom, red onion, olives or feta.)
Preheat the grill on your oven or turn it up to the highest heat.
Line a baking tray with foil and set aside.

Thinly dice up all your fillings on a chopping board ready to spread onto your pizza.
To make the omelette, beat the eggs in a small bowl with a fork until combined.
Heat a small frying pan on a medium heat and add in the oil.
Pour the eggs into the pan and cook for 1-2 minutes or until the underside is cooked.

Gently flip the omelette over with a spatula and continue to cook the omelette for another minute or until browned. Make sure you are very careful when flipping the omelette so it doesn't break. Remember this is your pizza base.
Slide the omelette onto the lined baking tray and spread over the tomato paste. Make sure to spread it to the edges of the base.
You can use other sauces instead of tomato paste such as barbeque sauce
Sprinkle the chopped fillings evenly over the base, then sprinkle the cheese over the top.
Make sure you layer the cheese over the top
Grill in the oven for 5 minutes or until the cheese has melted. Slice up and enjoy.
