One Pot Chorizo Prawn Rice

One pot recipes are great for cooking up when you have friends around for dinner. Throw it all together, put it on the table and then let everyone dig in. This one pot chorizo and prawn rice dish is filling and the sweet pop of the cherry tomatoes are great with the spice and flavour of the chorizo.



Preparation Time: 15 minutes
Cooking Time: 45 minutes
Serves: 6-8

Ingredients
2 tbsp. olive oil
3 garlic cloves, crushed
1 onion, finely chopped
2 red chillis, chopped
425g cooking chorizo, chopped
450g long grain rice
1tsp smoked paprika
200ml white wine
1.5L hot chicken stock
170g frozen peas
400g large raw prawns
250g cherry tomatoes
2 tbsp. flat leaf parsley

Method
  • Heat the oil in a wide pan and fry the onion, garlic, chorizo and chillis until the onion has started to soften.
  • Add in the paprika and rice followed by the wine. Leave to simmer until the wine has been absorbed.
  • Pour in the stock and reduce the heat to a low simmer for around 10 minutes or until the rice has cooked through.
  • Next add in the tomatoes, peas and prawns.
  • Once the prawns have turned pink, throw in most of the parsley, reserving a little to garnish.
  • Garnish with parsley and serve up to your guests with a flourish.
