One Pot Fish Dish
As a busy mum trying to juggle fun times with my kids and a career, I'm always on the look out for a tasty filling meal that I can create from scratch but without too much washing up involved.
With the addition of cannellini beans and potatoes, this one pot fish dish creates a filling meal. I like a little spice in my food but you can avoid the harissa if your kids are joining you for dinner.
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 3-4 servings
Ingredients
2 cloves garlic
1 onion
1 courgette (zucchini)
1/2 red pepper
1 heaped tsp harissa
1 carrot
8-10 baby potatoes
500g tomato passata
500g tinned cannellini beans (or used dried ones which have been soaked overnight)
2 large thick fillets of firm fleshed white fish (I've used cod but look for whatever is local to you)
Salt and pepper
Method
Preheat oven to 200 degrees or slightly less if fan forced.
Roughly chop the onion, garlic, red pepper and courgette.
Heat a little oil in a casserole dish and the fry the roughly cut vegetables for around 5 minutes until they start to soften.
Add in the harissa and mix through.

Dice the carrots and chop the baby potatoes into chunks and then add to the pot. I cut them quite small so that I don't have to precook them. A great way to save time and washing up other pans.
Pour in the tomato passata and cannellini beans.
Season with salt and pepper
Cut the fish into 4-8 pieces depending on their size.
Place the fish on the top of the vegetable and tomato mixture as a base.
Season the fish with a little salt and pepper.
Cover with a lid and place in the oven for 15 - 20 minutes.
The fish will steam cook and is ready when it easily flakes.
