One Pot Lamb Shank
This recipe makes a delicious lamb shank stew for the family. The meat is so juicy and tender, it falls off the bone.

Cooking Time: 2 hours
Makes: 2 servings
Ingredients
2 lamb shanks
Flour, for dusting
Salt and black pepper
3 carrots, coarsely chopped
1/2 bunch celery stick, coarsely chopped
6 pickling onions, peeled and halved
400g can crushed tomatoes
750ml beef stock
3 sprigs rosemary
150g spinach leaves
Method
Dust the lamb shanks with flour, salt and black pepper.
Heat olive oil in a deep saucepan over medium-high heat. Cook the lamb shanks for 3 minutes until browned.
Reduce the heat to low. Add the carrot, celery and onion and cook for 3 minutes.
Add the tomato, beef stock and rosemary.
Cover the pan with lid and cook for 1 hour.
Uncover and continue cooking for another 30 minutes or until shanks are very tender.
Add spinach leaves. Stir through until wilted.
Serve warm.
