One Pot Lamb Shank

This recipe makes a delicious lamb shank stew for the family. The meat is so juicy and tender, it falls off the bone.



Preparation Time: 15 minutes
Cooking Time: 2 hours
Makes: 2 servings

Ingredients
2 lamb shanks
Flour, for dusting
Salt and black pepper
3 carrots, coarsely chopped
1/2 bunch celery stick, coarsely chopped
6 pickling onions, peeled and halved
400g can crushed tomatoes
750ml beef stock
3 sprigs rosemary
150g spinach leaves

Method
  • Dust the lamb shanks with flour, salt and black pepper.



  • Heat olive oil in a deep saucepan over medium-high heat. Cook the lamb shanks for 3 minutes until browned.



  • Reduce the heat to low. Add the carrot, celery and onion and cook for 3 minutes.



  • Add the tomato, beef stock and rosemary.



  • Cover the pan with lid and cook for 1 hour.



  • Uncover and continue cooking for another 30 minutes or until shanks are very tender.



  • Add spinach leaves. Stir through until wilted.



  • Serve warm.
