One Pot Tomato Chicken
This one pot braised recipe is a healthy and versatile dish for the whole family to share with. If you prefer boneless or skinless chicken, you can replace drumettes with chicken breast or thigh. If you are not keen on sprouts, you can replace them with cabbage slices.

Makes: 4 servings
Ingredients
Chicken
10-12 chicken drumettes
1 medium-sized tomato, peeled, deseeded, roughly crushed
1 tsp fresh/dried oregano leaves, chopped
1 tsp chicken powder
1 tsp raw sugar
1 tsp potato starch
1 tbsp extra-light olive oil
Sauce
2 tbsp tomato sauce
2 tbsp Lingham's garlic flavoured sweet chilli sauce
2-3 cups water
Veggies
1 cup brussels sprouts, halved, soaked & drained
1 cup green bean sprouts, rinsed & drained
1 cup button mushroom slices
6-8 cherry tomatoes, halved
Method
In a mixing bowl, marinate chicken drumettes with crushed tomato, chopped oregano, chicken powder, raw sugar and potato starch. Stir to combine. Set aside for 15 minutes.
Heat 1 tbsp oil on a large/deep frypan over medium high heat, keep turning chicken until brown.
Add 2 tbsp tomato sauce and 2 tbsp sweet chilli sauce, stir quickly to combine with the chicken.
Pour into 2 cups water. Bring to a boil.
Reduce to low heat. Simmer for 15 minutes. Stiring and adding some water occasionally.
Lift the cover. Add brussels sprouts and mushrooms. Stir to combine. Cook for 3 minutes.
Add green beans sprouts. Stir to combine and cook for another minute.
Remove from heat. Add cherry tomatoes to combine.
Transfer to a big bowl for sharing.
Serve immediately with bread, noodles or steamed rice.
