Open Pineapple Mince Pie with Papaya Salad

This is a pie with a difference! Made from Lebanese bread, mince meat, tomato soup and pineapple, it is delicious, though quite rich.

Papaya is plentiful in the shops, and the salad is delicious with unusual flavours mixed together.

Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes: 4 servings

Ingredients
For the mince pie
400 g minced beef, low fat
1 tbsp oil
1 can tomato soup

1 x 440 g tin pineapple, crushed
3 rashers short cut bacon, chopped
1 cup cheese, grated

For the salad
100 g mixed green salad leaves
1 spring onion, chopped
3 tbsp coriander, chopped
½ papaya
1 red capsicum
½ avocado
½ tbsp lime juice
2 tbsp pumpkin seeds

DRESSING
Juice ½ lime
Pinch paprika
Pinch ground cumin
Pinch sugar
½ garlic clove, crushed
2 tbsp olive oil
Bit of white wine vinegar

Method
For the salad
  • Mix the salad leaves with the spring onions and coriander.

  • Scoop out the papaya and cut into small slices. Put them on top of the salad leaves.

  • Cut the capsicum into thin slices, and add to the salad leaves.

  • Cut the avocado into pieces and toss in some lime juice to stop it going brown. Add to the other ingredients.


  • For the dressing
  • Mix together the lime juice, paprika, sugar, cumin, garlic and olive oil. Add some salt if required.

  • Pour the dressing over the salad and toss carefully, adding a dash of the vinegar.

  • Sprinkle with the pumpkin seeds.


  • For the pie
  • Brown the mince in hot oil.

  • Add the soup and simmer for about 10 minutes or until a lot of the soup has been absorbed.


  • Preheat the oven to 200°/180° fan forced.

  • Put one slice of the Lebanese bread onto baking paper on a tray.

  • Put the mince on top of this and spread.


  • Add the other piece of Lebanese bread.

  • Top with the drained pineapple, bacon and cheese.


  • Bake for about 15 minutes or until the cheese is melted and going a golden colour.

  • Cut into wedges.


  • Serve with the salad.
