Orange Almond Coffee Biscotti
Biscotti, meaning twice baked biscuit, is a wonderful, crunchy, sweet and light snack which is great for dipping in hot drinks and will keep for up to 3 months, making it perfect for edible home-made Christmas gifts! It is also lactose free and relatively healthy, containing no butter or dairy.
Preparation Time: 20 minutes
Cooking Time: 15 - 20 minutes
Makes: 80 servings
Ingredients
2 cups plain flour
Pinch of salt
1/2 tsp baking powder
1 tbsp ground coffee beans
3/4 cup almonds, toasted and roughly chopped
Zest of 1 orange
3 eggs
1/2 tsp almond extract / essence
3/4 cup caster sugar
Method
Preheat oven to 180 degrees.
Sift dry ingredients into a large bowl.
Combine eggs, sugar, almond extract and orange zest in a separate bowl and mix thoroughly.
Create a well in the centre of the dry ingredients and add half the egg mixture. Stir in almonds and continue adding the remaining egg mixture, stirring until a sticky dough forms.
Line two baking trays with baking paper. Use lightly floured hands to shape dough into four 3 x 25cm logs. Bake for 15 - 20 mins until golden.
Cool logs for 10 mins before cutting into 5mm slices using a bread knife (or other large serrated knife).
Place slices on baking trays (you may need an extra tray for this) and bake for another 15 mins, turning half way through.
Cool on wire wracks and store in an air tight container.
