Orange Almond Coffee Biscotti

Biscotti, meaning twice baked biscuit, is a wonderful, crunchy, sweet and light snack which is great for dipping in hot drinks and will keep for up to 3 months, making it perfect for edible home-made Christmas gifts! It is also lactose free and relatively healthy, containing no butter or dairy.



Preparation Time: 20 minutes
Cooking Time: 15 - 20 minutes
Makes: 80 servings

Ingredients
2 cups plain flour
Pinch of salt
1/2 tsp baking powder
1 tbsp ground coffee beans
3/4 cup almonds, toasted and roughly chopped
Zest of 1 orange
3 eggs
1/2 tsp almond extract / essence
3/4 cup caster sugar

Method

  • Preheat oven to 180 degrees.

  • Sift dry ingredients into a large bowl.



  • Combine eggs, sugar, almond extract and orange zest in a separate bowl and mix thoroughly.



  • Create a well in the centre of the dry ingredients and add half the egg mixture. Stir in almonds and continue adding the remaining egg mixture, stirring until a sticky dough forms.




  • Line two baking trays with baking paper. Use lightly floured hands to shape dough into four 3 x 25cm logs. Bake for 15 - 20 mins until golden.




  • Cool logs for 10 mins before cutting into 5mm slices using a bread knife (or other large serrated knife).



  • Place slices on baking trays (you may need an extra tray for this) and bake for another 15 mins, turning half way through.



  • Cool on wire wracks and store in an air tight container.
