Orange and Apricot Mousse
Once again I wanted a dessert with no added sugar.
This one fits the bill, though I DID put a tiny bit of agave syrup in.
It is a light mousse which is great for those on a low fat diet.
Preparation Time: 15 minutes plus 30 minutes in fridge
Cooking Time: No cooking
Serves: 4
Ingredients
1 orange
1 700 g tin or jar apricots in natural juice, drained
12½ g gelatine
70 g yogurt, plain
1 egg white
Extra orange rind, optional, to decorate
Method
Grate the rind of just under half of the orange.
Cut the orange in half, and squeeze out the juice.
Put the drained apricots, and all but 1½ tbsp of orange juice, and the rind, into a food processor or similar and puree until it is smooth. If using sweetener, add this before processing.
Pour it into a bowl and leave.
Sprinkle the gelatine over the remaining orange juice in a small bowl and allow it to stand until hydrated - this only takes a few minutes.
It is hydrated and no liquid left
Put this gelatine mixture over a pan of hot water, and leave to dissolve, when it will get clear. Mine did not dissolve so I put it over heat for a short time.
If there are any lumps left, take them out.
One lump did not dissolve, so I removed this
Stir this gelatine mixture into the apricot puree, along with the yogurt.
Mix it well to blend fairly evenly.
Put it in the fridge for about 30 minutes or until it is partly set.
Beat the egg whites till they form peaks. Fold these egg whites carefully but thoroughly, into the partially set apricot mixture, using a metal spoon.
Divide the mousse into serving dishes and put into the fridge until completely set.
Easy, and unusual - serve with thickened cream!
