Orange and Coriander Chicken Noodles

Introduction A delicious alternative set of flavours for a fresh and fruity dinner.



Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
Chicken Breast
Coriander Seeds
Ground Coriander
Fresh Coriander
Lemon
Orange
Fresh noodles
Sweet Peppers
Shallots
Garlic
Tenderstem Broccoli
Sesame Seeds
Olive Oil
Black pepper
Natural yoghurt



Method

  • Make a marinade for the chicken using the juice and zest of half an orange and half a lemon, garlic, olive oil, sesame seeds, black pepper and coriander powder



  • In a dry frying pan heat up the coriander seeds until they start to pop.



  • Fry the shallots, peppers, broccoli and any other veg you fancy in some oil until starting to become tender.

  • Add the coriander seeds to the marinating chicken

  • Chicken mix to the pan where you are cooking the vegetables and thoroughly cook until the chicken is tender.

  • Add the fresh noodles, stirring to mix with the rest of the ingredients.

  • Top with freshly cut Coriander and serve.
