Orange Apricot Cream Dessert
I love apricots and as they are no longer in season here, I have used dried apricots in this dessert.
It has a tangy,creamy flavour and can be eaten with whipped or thickened cream on top.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 5 - 6 servings
Ingredients
260 g dried apricots
1 small orange, grated rind and pulp
30 g coconut sugar
Orange essence or Cointreau (2 tbsp)
125 ml whipping cream
2 tbsp slivered almonds
Method
Rinse the apricots and put them in a saucepan with the orange pulp, and rind.
Add just enough water to cover this.
Bring to the boil and simmer gently on a very low heat for 15 minutes.
Stir in the sugar and continue to cook over a very low heat until most of the liquid is absorbed (about 10 minutes), and the apricots are cooked through.
You may need to add a bit of water though I did not.
Let this mixture cool down a bit and put it in a blender and puree until smooth.
Add the Cointreau or orange essence (about 1 small tsp), and add the whipped cream.
Stir and add the slivered almonds.
Chill in individual dishes, top with an almond (optional), and serve with cream if desired.
