Orange Banana Dumplings
Dumplings are usually considered part of a savoury dish made from suet, to be served with a meal such as casserole. These dumplings, however, are a sweet treat, and pretty healthy too.
Preparation Time: 40 minutes
Cooking Time: 30 minutes (50 minutes if done in batches)
Serves: 8
Ingredients
1 banana
6 oranges
100g desiccated coconut
30g coconut sugar
240g brown rice flour
120 ml water
1 tsp ground cinnamon
Method
Slice the banana and mix with the coconut, coconut sugar, and cinnamon.
Dry fry the mixture for five minutes, stirring continuously.
Allow the mixture to cool, before squeezing it all together with your hands, into a ball.
Peel the oranges, then juice in a blender with the water.
Bring the juice to the boil in a saucepan, and then simmer.
Gradually stir in the rice flour, until forms a dough.
When cool enough to handle, divide the dough into eight balls, and then flatten the slightly with your hands.
Place about a tablespoon of the banana filling in the centre, and then fold the dough up to cover it and form back into a ball.
Place the dumplings over a pan of hot water and steam for twenty minutes (best done in two batches).
