Orange Banana Dumplings

Dumplings are usually considered part of a savoury dish made from suet, to be served with a meal such as casserole. These dumplings, however, are a sweet treat, and pretty healthy too.

Preparation Time: 40 minutes
Cooking Time: 30 minutes (50 minutes if done in batches)
Serves: 8

Ingredients
1 banana
6 oranges
100g desiccated coconut
30g coconut sugar
240g brown rice flour
120 ml water
1 tsp ground cinnamon

Method
  • Slice the banana and mix with the coconut, coconut sugar, and cinnamon.

  • Dry fry the mixture for five minutes, stirring continuously.

  • Allow the mixture to cool, before squeezing it all together with your hands, into a ball.

  • Peel the oranges, then juice in a blender with the water.

  • Bring the juice to the boil in a saucepan, and then simmer.
  • Gradually stir in the rice flour, until forms a dough.

  • When cool enough to handle, divide the dough into eight balls, and then flatten the slightly with your hands.
  • Place about a tablespoon of the banana filling in the centre, and then fold the dough up to cover it and form back into a ball.

  • Place the dumplings over a pan of hot water and steam for twenty minutes (best done in two batches).
