Orange Brandy Cake
This flour-less cake is made with polenta and ground almonds for a dense gluten-free sponge that is best served with cream.
Preparation Time: 25 minutes
Cooking Time: 50 minutes
Makes: 8 servings
Ingredients
1 orange
150g margarine
100g polenta
190g ground almonds
3 eggs
3 tbsp Truvia sweetener (or 195g caster sugar)
3 tbsp brandy
Method
Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.
Zest and juice the orange.
Cream the margarine with zest, 1 tablespoon orange juice, and 2 ½ tablespoons sweetener (or 150g caster sugar).
Beat in one egg at a time.
Fold in the polenta and ground almonds.
Spoon into a cake tin and bake in the oven.
Heat brandy in a saucepan with the remaining orange juice and sweetener/sugar.
Poke holes in the top of the cake and pour over the brandy syrup.
