Orange Chicken With Toasted Almonds

This is quite an easy, no fuss recipe to make, and it can be made a day ahead which saves a lot of work on the day you have visitors.

You can use mixed chicken pieces, however, for health reasons I would rather buy without the skin, so I used skinless legs, or lovely legs, and thigh fillets.

I normally like breast meat however I think it would get a bit dry for this recipe.

I made it with potatoes cooked in the same pot, and a salad.

Preparation Time: 25 minutes plus fridge time
Cooking Time: 65 minutes
Makes: 4 servings

Ingredients
1 kg chicken thighs and legs
¼ tsp chilli powder
1 tbsp butter
2 tbsp oil
1 onion, sliced
1 - 2 cloves garlic
1 cup orange juice
½ cup water
½ cup sultanas
½ cup almonds, toasted
2 oranges, peeled and thinly sliced
2 potatoes-partly microwaved

Method
  • Wash the chicken pieces, and dry with a paper towel. Put them in a bowl and sprinkle with chilli powder and salt and pepper to taste. Toss the chicken to coat well, cover and put in the fridge for 1 to 2 hours for flavours to go through and blend.

  • Meanwhile make your salad if using. I used sliced red cabbage, crumbled [link http://reviewclue.com.au/riverina-fetta-cheese/ fetta cheese], apple, [linkhttp://reviewclue.com.au/sandhurst-semi-dried-tomato-strips/ sundried tomatoes], fresh oranges, field mushroom, and [link http://reviewclue.com.au/kewpie-japanese-mayonnaise/ wasabi mayonaise].


  • Heat the oil and butter in a large saucepan or wok. Add the chicken pieces a few at a time and brown on all sides -about 6 - 8 minutes.

  • Drain on paper towels.


  • In the same saucepan, add the garlic and onion and cook till the onion softens -about 5 minutes. Add the orange juice, water, and sultanas.


  • Add the chicken, and par cooked potatoes, if using.


  • Bring to the boil, lower heat, cover pan and simmer gently until the chicken is tender -about 40 minutes. Check to make sure it has not boiled dry and if it looks dry add more orange juice.

  • Add the toasted almonds, and salt and pepper if required.


  • Garnish with the orange slices before serving.


  • Would also be nice with boiled brown rice however I only wanted to have one pot to wash up!
