Orange Chili Chicken on Soba Noodles
Orange and chili are another of the seemingly "new" ideas of mixing foods.
In this recipe I have mixed the chicken pieces with sweet potato and some yellow squash, which means you do not have to make separate vegetables in order to have a balanced meal.
Soba noodles are available in supermarkets, and are a healthier version of spaghetti or similar pastas.
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 2 servings
Ingredients
225 g chicken thighs, cut into pieces
2 oranges for juicing
1/3 cup honey
1/3 cup soy sauce
1 tsp garlic powder
1/2 tsp ginger
1 small sweet potato
4 or 5 yellow squash
2 eggs
90 g organic soba noodles (1 bundle)
Chili to taste
Method
Cut the sweet potato and squash into pieces.
Bring some water to the boil and add the sweet potato and squash, and par cook them for about 5 - 7 minutes only.
Squeeze the fresh oranges.
Over a high heat in a wok, heat the honey, soy sauce, ginger and orange juice.
Once it is boiling, add the chicken and the chilis. I used about 4 dried chilis, seeds removed and cut into pieces.
Add the cooked, cubed sweet potato and the chopped squash and cook for about 20 minutes or until the chicken is cooked.
Stir several times during cooking, so everything is evenly coated in the sauce
Meanwhile cook the soba noodles and they take about 4 minutes till al dente.
In another small frypan, scramble the eggs.
Once the chicken is cooked, add the noodles, and then the eggs.
I kept part of the eggs for the top, for decoration
Serve and eat.
This is also nice heated up in the microwave.
