Orange Pomegranate Cake

Your whole house will smell like Christmas while baking this cake, and things only get better after that. Exquisitely moist, and incredibly light, this fatless sponge will impress all your friends and family.

Preparation Time: 40 minutes
Cooking Time: 3 hours
Serves: 12

Ingredients
3 oranges
3 pomegranates
9 eggs
450g ground almonds
250g coconut sugar (or muscovado sugar if preferred)
150g raspberry jam
1 1/2 tbsp baking powder

Method
  • Simmer the oranges in boiling water for two hours.

  • Slice the oranges into quarters, remove any pips, and then puree them in a food processor (including peel).

  • Slice the pomegranates, and remove the pith from the seeds.
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/325& #3872 ;F/5 Gas.
  • Whisk the eggs for five minutes.

  • Beat in the ground almonds, coconut sugar, baking powder, orange puree, and half the pomegranate seeds.

  • Pour the mixture into an 11inch cake tin, and then bake in the oven for 1 hour.

  • Turn the cake out upside down, and spread the jam over the top.
  • Scatter the remaining pomegranate seeds on top.
