A colourful vegan stir fry full of healthy veg and strong flavours.

Ingredients
1 orange bell pepper
1 sweet potato
2 small green chillies
3 cloves of garlic
600g new potatoes
200g carrots
80g cherry tomatoes
100ml
Homemade Vinegrette
Method
Steam the potatoes over a pan of simmering water for twenty minutes, and then slice in half.
Chop the tomatoes and pepper.
Blitz the carrots, sweet potato, chillies, and garlic in a food processor so that it looks like rice.
Mix all the ingredients together and the fry in a pan for about ten minutes, string occasionally.
