Originally I had a recipe for an orange and lavender cake, but aside from the fact I don't like lavender, I also had no idea where to get any unless I bought an entire plant. I therefore thought about what other herbs I could use instead, and thyme seemed like a good choice.

Cooking Time: 1 hour
Makes: 10 servings
Ingredients
125g margarine
1 tsp thyme
35g Truvia sweetener (or 125g caster sugar)
4 eggs
200g self-raising white flour
50g ground almonds
100ml buttermilk
2 oranges
Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/375 ༠F/5 Gas.
Cream margarine with sweetener.
Beat in eggs one at a time with a handful of flour each.
Fold in the remaining flour, ground almonds, buttermilk, orange juice, zest, and thyme.
Pour the cake mixture into a loaf tin and bake for one hour.
