Oregano & Garlic Roasted Chickpeas

A flavoursome, healthy, and satisfying alternative to chips or salted nuts, these roasted chickpeas provide a long lasting hit of energy, fibre and protein.

Easy to make as a large batch in advance, you will never be reaching for an inferior mid-afternoon pick me up again!

Cooking Time: 30 minutes
Makes: 8 servings

400g can chickpeas, drained, rinsed, pat dried
3 tsp extra virgin olive oil
1/2 tsp dried oregano leaves
1/2 tsp garlic powder

substitute organo and garlic for:
cinnamon and nutmeg
chilli flakes and garlic powder
rosemary leaves and garlic powder
paprika and curry powder
ground cumin and ground coriander
honey and cinnamon (don't use oil)
salt and garlic powder

Whatever floats your boat, experiment and see what you like!

Preheat oven to 200C.
Spread the chickpeas evenly across a lined baking tray, and roast for about 30 minutes, or until brown and crispy.

Transfer to a bowl and toss through the oil, oregano and garlic, and leave to cool.

Portion into small, air-tight, snack containers for a quick and filling midday fix!
