Organic Blueberry Pancakes

Some healthy organic blueberry pancakes ready to eat

"A healthy breakfast treat that the kids and the toughest tastes will love."

Preparation Time: 5-10 minutes
Cooking Time: 20 minutes (with two pans, allow 5 minutes for each pancake)
Makes: 8

The ingredients laid out

Once the eggs have been cracked, preparing the batter.

125g Blueberries (1 punnet)
500g Organic Flour (any)
1/2 a Litre of Soy Milk
2 Free Range Eggs
8 tsp Butter

Now whisking the batter with the blueberries in

Place flour into a mixing bowl.
Take each egg and crack it on one side and with both hands place into the mixing bowl.
Pour the milk into the mixing bowl. Note: do not add in the blueberries just yet.
Whisk the batter together for about 2-3 minutes, ensuring that all ingredients thus far have been whisked together, and then pour 100gram of blueberries into the batter for another minute.
With each pan, ensure the stove is on low-medium heat, otherwise your pancakes will burn quickly. Take one teaspoon of butter and apply to the pan, swirling in a circular motion for each pancake to cook. Apply the batter. Once you have counted to four stop pouring. About two minutes later, flip the pancake over for the batter on the other side to cook. Repeat for each pancake you wish to cook.
Place each cooked pancake onto a plate and stack one on top of the other for serving. With the remaining 25grams of blueberries, decorate the serving plate.

Optional extras: maple syrup, ice cream, honey and cream etc - especially for the kids.
