Oriental Salad

It is the hot time of the year so hunching over a hot and sizzling stove top is quite a mission. Fret not about creating a deliciously healthy meal with this funky salad!



Preparation Time: 20 minutes
Cooking Time: 0 minutes
Makes: 5 - 7 servings



Ingredients
About two handful of each iceberg salad, baby spinach and kale.
1 can of kidney beans
1 - 2 tomatoes
1 onion
2 medium sized cucumbers
1/2 a large mushroom or multiple smaller ones
1/4 ear of corn
A spice mix to taste, recommended is salt, pepper, sesame seeds, curry powder, sweet paprika powder and nigella seeds.
A handful of nuts to garnish



Method
  • Wash all raw ingredients to remove any soil or other residue. Chop the onion, tomato, cucumbers, corn and mushrooms and add to a bowl with the beans and leaves.

  • Mix all things together thoroughly and follow by adding the spice mix and nuts for garnish and to enhance the flavour and bring out the oriental edge.

  • Drizzle with a tad of olive oil or vinegar and serve. Bon appetit!
