Osso Bucco with Sweet Potato Mash

This slow cooker recipe is great for a winters day but also delicious anytime of the year. Simple to prepare and using a slow cooker can be left until you're ready to dish up.



Preparation Time: 15 minutes
Cooking Time: 8 hours
Makes: 4 servings

Ingredients
500 grams of Osso Bucco
1 onion, diced
2 cloves of garlic, squashed
2 carrots, chopped
250grams mushrooms, quartered
1 cup beef stock
1 can crushed tomatoes
2 tablespoons of tomato paste
1 sweet potato
1 tablespoon of butter or margarine
3 tablespoons milk




Method
  • Prepare all ingredients and place into the slow cooker.



  • Cook on low for 8 hours or high for 5 hours. The meat will become much more tender with a longer cooking time.



  • When the time is up prepare your sweet potato mash. Peel and cut the sweet potato into chunks. Put into a saucepan and cover with water. Over medium heat bring to the boil.



  • Cook for 15 minutes but check they are cooked by piercing with a knife or fork. If they are cooked the knife will go in easy.

  • Once cooked mash using a potato masher adding the milk and butter.



  • Dish up the sweet potato mash and Osso Bucco and enjoy. (I remove the bones before serving)
