Oven Baked Sea Bream With Rosemary Roasted Garlic
I often resort to simply pan frying fillets of fish as a quick and easy way to prepare, however this oven baked recipe is just as easy. I've used sea bream but if it's not local, you could easily use any delicate white fish. Sealed tight and steamed in white wine, the addition of a few chili flakes, fresh rosemary and mild, sticky roast garlic bring this dish to life.

Makes: 2 servings
Ingredients
2 sea bream fillets
2 sprigs rosemary
Dash of olive oil
Dash of white wine

Sprinkle of chili flakes
Sea salt
Aluminium foil and baking parchment to create parcel for steaming in
Method
First you need to create a parcel for baking the fish in. Use a piece of aluminium foil that's double the length of your fish fillets and a piece of baking parchment just a little smaller.
Lay the baking parchment on top of the foil and wrap the foil over the edges to seal them together.
Place the fillets in the centre of the foil/parchment.

Sprinkle on some chili flakes.
Lay over the rosemary and drizzle with olive oil.
Sprinkle some course sea salt over the fish.
Add a dash of white wine.
Wrap up the parcel by joining together and wrapping over the two parts that meet.
Roll up the sides. The idea is to create a sealed parcel so that none of the steam can escape.
Place on a baking tray and cook in an preheated oven at 220c fan for 10-15 minutes.
Be careful of your fingers unwrapping the foil.
