Oven Fried Chicken Chimichangas

This is a healthier way to serve chimichangas as they are baked instead of the traditional way of deep-frying them.

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 4 pieces

Ingredients
¼ to ½ cup enchilada sauce or salsa
2/3 tsp cumin, ground
1/3 tsp dried oregano
1½ cups cooked chicken, chopped
2/3 cup cheese, grated
2 spring onions, chopped
6 flour tortillas
1 1/3 tbsp margarine, melted
Cheese, grated, to serve
Spring onions, to serve - optional
Picante sauce, to serve - optional

Method
  • Mix the chicken, sauce or salsa, cumin, oregano, cheese and spring onions.


  • Put about a bit more than ¼ cup of the chicken mixture in the centre of each tortilla.


  • Fold opposite sides over filling.

  • Roll up from the bottom and put them seam side down on a baking sheet.


  • Brush with the melted margarine.

  • Bake at 200°/180° fan forced for 25 minutes or until they are golden.

  • Garnish with the additional cheese and spring onion and serve with sauce on the side.
