When it comes to simple yet delicious recipes, nothing beats oven roasted chickpeas. They are a great snack or a wonderful side dish with a meal. But as I will explain later, this can be simply the start of something bigger, better, more colourful and super delicious.
Preparation Time: 30 Seconds
Cooking Time: 30-40 minutes
Serves: Nice side dish for a meal for 4
Ingredients 400g can of chickpeas, drained.
About 1 teaspoon cumin, or to taste
Drain the chickpeas and place on an oven roasting pan in a single layer.
Add a little olive oil and mix to evenly coat the chickpeas.
Sprinkle with cumin.
Roast in the oven at 200 C for 30-40 minutes. 30 minutes will cook the chickpeas but leave them soft, 35 minutes will make them slightly crunchy, and 40 minutes will make them ultra crunchy. The ones in the photo below were roasted for 35 minutes.
Serve as a side dish straight from the oven.
You can use this recipe as a base for other recipes such as the one below where I added a little bit of onion and capsicum before roasting. Other ingredients you can add in include carrots and potatoes.
It is also nice to let the chickpeas cool and add them to a salad. The salad below includes roasted chickpeas and capsicum, added to a salad of baby spinach, cherry tomatoes, snow peas and Danish feta.
