A simple Japanese chicken & egg dish, served on top of steamed rice.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 4 servings

4 chicken thigh fillets, cut into bite-size pieces
6 tablespoons mirin*
1 tablespoon dashi*
4 tablespoons soy sauce
2 tablespoons sugar
1 onion, sliced thinly
4 eggs, lightly beaten
Japanese steamed rice, to serve
miso soup, to serve

The Ingredients

Pour mirin into a large frying pan and bring to the boil.

Add in soy sauce, dashi, sugar and 2 cups of water. Bring to the boil.

Add the onion in a single layer and top with chicken pieces.

Cover and bring to the boil. Turn the heat down and cook for 10 minutes.

Slowly drizzle the beaten egg all over the chicken and onion.

Cover and cook until the egg is done.

Pour over steamed rice and serve with miso soup.

Hi gmthe, oyakodon is really simple and easy to make and it is yummy too! Dashi is Japanese fish stock. You can easily find them in Asian grocery. I have attached a picture of how it looks like. Hope you enjoy this recipe!
This sounds & looks delicious, looks pretty uncomplicated to make too. Not familiar with what dashi is though? Some kind of sauce, marinade or condiment. Please advise availability for this seasoning. I'd like to make this dish.
