Palmier Biscuits

Palmier (or elephant ears cookie) remains one of my favourite cookies. I used to buy them until I realised how easy they are to make. These are really delicious, super crunchy and a perfect sweet treat.


Preparation Time: 10 minutes 15 minutes standing
Cooking Time: 16 minutes
Makes: 25 palmiers (approx)

Ingredients
1 sheet of frozen puff pastry
1 egg, slightly beaten
Brown sugar



Method
  • Brush your puff pastry with the egg and sprinkle with brown sugar.



  • Fold one side, brush with egg and sprinkle with some more sugar. Repeat with the other side.



  • Fold both sides again until they meet in the middle. Repeat with the egg and brown sugar.



  • Fold both ends, repeat with the egg and sugar.



  • Put in the freezer for 15 minutes to allow the pastry to firm up.
  • Preheat oven to 180 degrees (fan-forced).
  • Cut the pastry into small strips (about half inch).
  • Sprinkle with more sugar, if desired.
  • Place each strip onto a baking tray and slightly open the top as shown in the image below.



  • Bake for 8 minutes. Flip the palmiers and bake for another 8 minutes until golden.
