Palmier (or elephant ears cookie) remains one of my favourite cookies. I used to buy them until I realised how easy they are to make. These are really delicious, super crunchy and a perfect sweet treat.
Preparation Time: 10 minutes 15 minutes standing
Cooking Time: 16 minutes
Makes: 25 palmiers (approx)
Ingredients
1 sheet of frozen puff pastry
1 egg, slightly beaten
Brown sugar
Method
Brush your puff pastry with the egg and sprinkle with brown sugar.
Fold one side, brush with egg and sprinkle with some more sugar. Repeat with the other side.
Fold both sides again until they meet in the middle. Repeat with the egg and brown sugar.
Fold both ends, repeat with the egg and sugar.
Put in the freezer for 15 minutes to allow the pastry to firm up.
Preheat oven to 180 degrees (fan-forced).
Cut the pastry into small strips (about half inch).
Sprinkle with more sugar, if desired.
Place each strip onto a baking tray and slightly open the top as shown in the image below.
Bake for 8 minutes. Flip the palmiers and bake for another 8 minutes until golden.
