Pan Fried Potatoes with Chicken and Mushrooms in Sour Cream
This is a great idea if you have leftover cooked chicken meat, which I often have after making a [link http://recipeyum.com.au/crockpot-24-hour-chicken-broth/ chicken broth] or a [link http://recipeyum.com.au/chicken-soup-using-chicken-frames/ chicken soup].
It is an easy recipe and you could add a salad with it - I had a shop bought one in this instance.

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Serves: 2
Ingredients
Bit of oil
About 250 g potatoes
For the filling
About 10 g butter
1 small onion, chopped
75 g mushrooms, sliced
1 to 1½ cups cooked chicken, shredded
50 ml sour cream
Bit of dry sherry
Pinch of paprika
Method
Boil or microwave the potatoes until they are ALMOST tender, and let cool.
When cool enough, slice.
Heat the oil in a fry pan and saute the potatoes until they are golden brown. Add some salt and pepper and keep warm.
In the same pan, melt the butter and fry the onion gently for about 4 minutes.
Stir in the mushrooms and diced chicken, and cook for another 4 minutes.
Spoon in the sour cream and the sherry, and bring to the boil.
Cook a further 5 minutes.
Surround the mixture with overlapping potato chips, and sprinkle on the paprika.
Serve using the fry pan as the serving dish, and i served it the second time in a bowl with salad and pickled vegetables.
