Pan Fried Potatoes with Chicken and Mushrooms in Sour Cream

This is a great idea if you have leftover cooked chicken meat, which I often have after making a [link http://recipeyum.com.au/crockpot-24-hour-chicken-broth/ chicken broth] or a [link http://recipeyum.com.au/chicken-soup-using-chicken-frames/ chicken soup].

It is an easy recipe and you could add a salad with it - I had a shop bought one in this instance.

Preparation Time: 20 minutes
Cooking Time: 25 minutes
Serves: 2

Ingredients
Bit of oil
About 250 g potatoes

For the filling
About 10 g butter
1 small onion, chopped
75 g mushrooms, sliced
1 to 1½ cups cooked chicken, shredded
50 ml sour cream
Bit of dry sherry
Pinch of paprika

Method
  • Boil or microwave the potatoes until they are ALMOST tender, and let cool.

  • When cool enough, slice.

  • Heat the oil in a fry pan and saute the potatoes until they are golden brown. Add some salt and pepper and keep warm.


  • In the same pan, melt the butter and fry the onion gently for about 4 minutes.

  • Stir in the mushrooms and diced chicken, and cook for another 4 minutes.


  • Spoon in the sour cream and the sherry, and bring to the boil.

  • Cook a further 5 minutes.

  • Surround the mixture with overlapping potato chips, and sprinkle on the paprika.

  • Serve using the fry pan as the serving dish, and i served it the second time in a bowl with salad and pickled vegetables.
