Pan Seared Salmon with Fennel Red Grapefruit Cranberry Salad
Sometimes the best and most flavoursome way to cook fish is the simplest. There is a tendency to overcomplicate flavours especially cooking with salmon when really the best way to draw out the rich, tender and sweet flavours of this fish is to simply season with a little salt and pepper and pan fry.
Add a salad and you have a healthy, low-fat, high protein, quick and easy meal for family and friends.

Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 4 as an entree
Ingredients
4 Small Salmon Steaks
Salt
Pepper
Fennel Seeds
Fennel, Red Grapefruit, Cranberry Salad
Method
Pat dry the salmon then season the skin with salt; set aside for 5 minutes.
The salt will draw moisture out, so you'll need to pat dry the salmon again.
Season the fleshy part of the fish with a little salt, pepper and fennel seeds.
Thinly coat a frying pan, griddle or BBQ with cooking oil spray.
When the frying pan or BBQ is hot add the salmon (skin side down) and pan fry for 5 minutes. Turn onto the flesh side and sear for a couple of minutes.
Pan fry the skin side first then turn the salmon over and sear the flesh.
Prepare the Fennel, Red Grapefruit, Cranberry Salad.
Arrange the salad on individual plates and place the pan seared salmon on top.
