Pancetta And Potato Cubes With Red Cabbage And Apple Sauce
Pancetta is not often used in cooking here in Australia. It is made of pork belly and is cured similar to bacon.
The difference between pancetta and bacon is that pancetta is unsmoked, and has more spices through it.
In this recipe it is ideal, as the spice flavours go through all the other ingredients. The browned cubed potatoes teamed with the crispy pancetta and red cabbage are a tantalizing mixture that left me wanting more.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 - 3 servings
Ingredients
2 large potatoes, cubed
Dob butter
1 tbsp olive oil

220 g red cabbage, shredded
1 large apple, chopped
Apple sauce (optional)
Method
Cube the potatoes. Put a dollop of butter and the oil in a medium/hot wok, and cook the potatoes for about 10 minutes or until browned.
While these are cooking, cook the shredded red cabbage for about a minute in the microwave. Do not cook till it wilts.
Push the potatoes to one side in the wok, and add the cubed pancetta. Cook this until it is crispy.
Stir through the part cooked red cabbage, and the chopped apple, and cook, stirring, until the apple is warm and slightly cooked.
Serve immediately.
I served it with some bought apple sauce and this complimented a very tasty dish, which I could not resist having a second helping of.
