Pandan flavour is widely used in Asian desserts for their unique fragrance and the pale green colour addition to cakes. The aroma is similar to vanilla and almond, but pandan has its own distinct taste. If you have ever tried a Pandan chiffon cake, this is an easier option to replicate the cake. This pandan swiss roll recipe is easy to make, requires only one bowl and 6 ingredients to make the cake batter. The cake itself is very light and spongy. The roll cake is then filled with some coconut whipped cream and toasted coconut to make it fancier.

Preparation Time: 15 minutes
Cooking Time: 12 minutes
Makes: 8 slices

For the cake batter:
3 eggs
4 tablespoons granulated sugar
3 tablespoons all-purpose flour
1 tablespoon cornflour
3/4 teaspoon pandan extract
1/4 teaspoon pandan essence, optional

For the filling:
100 ml whipped cream
2 tablespoons coconut cream powder
1 tablespoon coconut sugar
Toasted shredded coconut, optional

Preheat oven to 170 degrees celcius (fan-forced).
Sift the all-purpose flour and cornflour together.
Beat sugar and eggs on high, until white and fluffy.
Once the batter falls in ribbons, add the pandan extract and distribute evenly.
Carefully fold in sifted flours and mix until well-combined.
Pour the cake batter onto a lined 9 inch squared pan.
Tap the pan to remove any air bubbles
Bake for about 12 minutes. If the cake browns too much after 5 minutes, reduce temperature to 160 degrees.
Once baked, remove from the oven. Gently tap on the bench to stop cake to shrink too much, and let cool completely.
In the meantime, to make the filling, whip the cream until soft peak. Then add the coconut cream powder and sugar and whisk until stiff peak.
Carefully flip the cake over another baking paper.
Trim 2 ends on a 45 degrees angle.
Spread the filling evenly, leaving a gap on one end.
Top with some toasted coconut, if desired, and then carefully roll cake as tightly as possible.
Twist both end and let to set in the fridge for about 30 minutes.
Slice and serve.
