I tried this recipe for the first time and it turned out to be a great hit in my family.This medley of cottage cheese and vegetables is packed with exotic flavours and is absolutely delightful to serve with naan, rice or paratha accompanied with a green salad.
Preparation Time: 10-15 minutes
Cooking Time: 5 minutes
Makes: 4-6 servings
Ingredients
3/4 cup baby corn , cut into 4 lengthwise and blanched
1 cup paneer (cottage cheese) , cut into 25 mm. (1") strips
1/4 cup thinly sliced spring onions whites
1/4 cup thinly sliced green capsicum
1/4 cup thinly sliced yellow capsicum
1/4 cup thinly sliced red capsicum
2 tbsp oil
1/4 tsp turmeric powder
1/2 tsp chilli powder
1/2 tsp coriander-cumin seeds powder
1/2 cup thinly sliced tomatoes
2 tbsp tomato ketchup
2 tbsp tomato puree
1/4 tsp garam masala (can be obtained from Indian groceries)
1 tsp vinegar
1/4 tsp sugar
Salt
2 tbsp finely chopped spring onion greens
1 tbsp finely chopped spring onion greens to garnish

Carrot, capsicum and baby corn
Method
In hot oil, fry paneer and leave to drain on kitchen paper.

Fried paneer
Heat 1 tbsp oil, toss in the veggies (excluding tomatoes and spring onion greens) and sauté on a low heat for a few minutes.

Saute until vegetables are tender
Add the turmeric powder, chilli powder, coriander, cumin powder, tomatoes, tomato purée and tomato ketchup. Mix well and leave to simmer until the vegetables are tender.

Add spices
Add the fried paneer, garam masala, vinegar, sugar and salt.
Add a little of water and stir.
Mix well and cook on low flames for 5 minutes.
When done, garnish with spring onion greens.

Paneer Jalfrezie ready to serve
