I have a lot of spinach growing at the moment, so decided to make some muffin-like cakes with it - any type of spinach would be suitable.
I served them as an accompaniment to French bread stuffed with cheeseburger. They would also be good in place of other vegetables or salads with most meals or could be eaten as a casual meal with some crusty bread.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 6 cakes
Ingredients
180 g fresh spinach
¼ cup low fat cottage cheese
¼ cup Parmesan cheese, grated, plus a bit to garnish
1 large egg, beaten
Small clove garlic, minced
Method
Preheat the oven to 200°/180° fan forced.
Chop the spinach up finely or if you have a processor you could pulse it in stages. I used a cutter which I bought for chopping parsley.
Add the cottage cheese, garlic, eggs, some salt and pepper to taste, and stir.
Either spray a muffin pan with oil, or this time I bought paper patties to line the pan. Divide the spinach mixture among the six cups and press them down a bit.
Bake them until set, about 20 minutes.
Let them stand in the pan for a few minutes and turn them out onto your plates.
Add a bit more Parmesan to the tops, and serve.
They are great hot or cold, and good for lunch boxes for several days.
